12 oz whole wheat pasta
1/2 cup natural peanut butter
4 sliced scallions
4 tbsp soy sauce
3 tbsp rice vinegar
1 clove garlic minced
1/2 tsp sugar
cayenne pepper and salt and pepper to taste
Sliced cucumber for garnish
Cook Pasta. Whisk peanut butter with 3/4 cup boiling water until smooth. Stir in scallions, soy sauce, rice vinegar, garlic, sugar and cayenne. Drain pasta and toss with peanut sauce. Garnish with cucumber, radish or extra peanuts or cilantro. Serve hot or at room temperature
