Elizabeth’s Chicken Thigh Recipe!

Heat a cast iron skillet over medium heat. With a paper towel, pat 4-6 bone-in, skin-on chicken thighs dry, then season both sides generously with salt and pepper. Add 1 tbsp coconut oil and 1 tbsp butter to the pan. Place thighs skin side down in the pan and cook until skin is golden brown and crispy, about 7-10 minutes. Flip and cook an additional 5-7 minutes until thighs are cooked through. Serve. Be happy. ­čÖé
